Taco Pizza…and Tacos

Had 2 left over BBQ chicken breasts and decided to make a taco medley.   I make one with a hard taco shell, one with a low-carb soft taco shell (baked to crisp), and made one open face pizza style.  Here’s the recipe for my pizza taco:

1 large tortilla

1 cooked chicken breast, shredded

Chopped onions

Black Bean dip

Salsa

1 oz Cheese

Taco seasoning

Lay tortilla on baking rack.  Spread on a layer of black bean dip and salsa.  Top with onions.  Next top with taco seasoning and shredded chicken.  Sprinkle shreaded cheese on top.  Bake at 375 for 10+ minutes or until its gets as cripy as you like it.

Slice into 4 wedges and enjoy!

BBQ Drumsticks

Saw a recipe online this week and got a big craving for drumsticks.  Plus, I’ve been reading a lot lately on the actual health benefits offered from dark meat.  So, even though it was really hard, I bought some and cooked them up.

Bake for 30 minutes at 400 degrees. Did some breasts too.  Were really good.  Of course this was Thursday night so I ate them Friday night.

Thus, I served them with some home made “fries.”  Here’s the recipe (and reccomendations) for those.

1 Baking potato (sliced into sticks)

Garlic seasoning, onion powder, ranch seasoning, and chili powder

1 egg white

Slice potato and mix with egg white (this is to make it crispy but you could do the same thing with olive oil…would probably work better.)  Place them on a well greased baking sheet.  It is very important this is coated very well with a non-stick coating. 

Top fries with desired spices

Bake at 375 for 20 minutes, flip the fries after 10 minutes

Dancing lady

Aight so today at the gym, this lady was on one of the carido machines–like the “wiggle?” machine?  I don’t know what else you would call it but your feet are on two platforms and you sort of push side to side, kind of like cross county skiing…but more like wobbling.

Anyways this chick was ballin out– headphones in, moving her body to the music while syncing it with the motion of the machine, arms flailing, fists pumping.  It was hysterical.  I didn’t say anything but I wanted a video so bad

Chicken Cordon Bleu

Here’s how the Chicken Cordon Bleu I made Sunday night came out when I reheated it tonight.  It was delicious and the ham really gave it a lot of flavor.

I had it with a baked potato, but instead of seasoning the inside, after I washed it, I covered it with ranch seasoning, oregano, and onion powder.  Then I wrapped it in Saran wrap and cooked it in the microwave so the spices would be infused into the potato.  Haha it kinda worked…

I won’t go into details, but here’s how it all looked.  Honestly, I don’t think I’ve had this since like a birtday dinner in maybe my junior or senior of high school.

Oh yeah.  7 round for time– 5 hang clean, 7 burpees.  There was other stuff too, but I know no one cares or wants to hear it.  If you do want to know ask me

Scrambled Nachos

Took today off.  Which was really really hard. So I stressed about needing to eat extra healthy.  I decided to come up with a recipe that included Egg Beaters (since they’re fat free, but more importantly because I had no other food.)

I baked some corn tortillas in the oven till they were crispy then covered them with scrambled eggs and salsa.  It was actually really good!  Here’s the quick and dirty of the recipe:

-Eggs (however much you want)

-Corn tortillas

-Desired spices

-Salsa

Directions:

Heat the oven to 375 and place the tortillas on a wire rack but don’t let them overlap.  Light spray of PAM to crisp them better.  Bake them in the oven 10-15 minutes, or until crispy but not black.

While tortillas are crisping, heat griddle and coat with non stick spray. Add eggs and spices and scramble them.  Take the tortillas out and pour on a little bit of salsa and add cheese if you want it.  Next pour the eggs over top, add more salsa, and out more cheese or whatever you want.

The recipe probably didn’t really need an explanation…
