Plain ol’ onion chicken

Got home a little early today so I figured I would cook something since I had the time, and could save my made-in-advance dinner for a more rushed night.

Really just wanted so good clean food- some mix of complex carbs, protein, and fats.  Decided I would go with chicken (really???)  Made this once before: Onion-ish chicken

2 chicken breasts trimmed and butterflied

1/2 cup chopped onions

basil, italian seasoning, ranch seasoning, garlic powder, and onion powder- all as desired to taste

favorite cheese (if you want it)

Directions:

Trim and split chicken.  Season generously with desired spices.

Next add chopped onions and cheese into pocket and fold over.  Close with a tooth pick if you have it (I didn’t.)

Baked in pre-heated oven at 375 for 20-30 minutes depending on breast size and oven power.

Serve!  I had it with steamed broccoli and a baked sweet potato
