Crispin Chikin

Last night since I didn’t have work all day I cooked dinner.  Unfortunately I’m now realizing I don’t have enough meals to get me through the week–but I’ll figure something out.  There’s always eggs and potatoes or tortillas. 

I cooked 2 breasts just covered in spices and rolled in panko bread crumbs- nothing fancy.  With the 3rd chicken breast that was in the pack (since I will pair that with the 1 left over onion chicken from last week) I made my version of chicken cordon bleu.  I butterflied the chicken breast and laid it open.  Next I took a piece of deli ham, that was leftover from my company this weekend, and spread a piece of French onion Laughing Cow cheese on it.  I rolled that up, and for lack of a cooking term, shoved it inside the chicken and folded the breast back over.  I put some seasonings and poured some panko on top and baked it the same as the other chicken.  From how it looks, I think it wll be great–I’ll update that once I try it though.  Here’s how they looked

2 panko chicken breasts and 1 "Cordon bleu" chicken breast
