My dad makes a meal he calls the “one-pot feast.” Pretty much just anything we have for leftovers thrown in a skillet with brown rice and vegetables. Sounds easy, and it is, but it really is delicious. I decided, however, that it needed to be taken a step higher. Thus, I created Pizza Rice!
Basically its just like making spaghetti and marinara sauce with chicken, BUT, I used brown rice, made it in a skillet, and doctored it up to taste delicious! Here are the ingredients
- 1 or 2 cups cooked brown rice
- Mushrooms
- Sliced zucchini
- Grilled chicken breast
- Tomato sauce
- Mozzarella cheese (or other if you want to be daring)
For the tomato sauce I simply started with a can or crushed tomatoes, since they are a little bit heartier, and added to it garlic, onions, basil, oregano, and some crushed red peppers. While I was mixing this up, I had my vegetables heating up in the pan as well as my chicken on the cooking on the foreman grill.
I then took the sauce and added it to the vegetables and then added in the rice as well.
After this heated through, I topped it with the grilled chicken that I had sliced up. Meanwhile, I turned on the broiler in the oven
Then I got cheesy with it and put the whole pan under the broiler! Make sure you pan is oven-safe if you try this!!
It was great! It took a fair amount of prep-work, but had all the ingredients just been leftovers, it would have been incredibly easy! Hope you all enjoy this nutritious, healthy, as easy meal!
