Throwdown! (Paleo-Blogger style)

well right now I’m up at Lake Conesus in upstate New York with no Internet so I’m posting from my iPhone! However, as the INITIATOR of a Paleo-recipe throwdown challenge, my opponent, Lori from www.whatrunslori.com, had to post hers yesterday, I have to make the best of surroundings and post mine. So no pictures, however, they will come along with the VIDEO for my recipe!

The challenge was to make a paleo recipe using Ground beef and Coconut cream/milk! Weird I know, right? But I had to make it hard… It’s a throwdown!

So what I came up with was coconut meat sauce! Here is the recipe for one person-ish
- 1/2 pound grass-fed ground beef
- 1/4 cup real coconut milk (in the video I add another 1/4 cup of water, but don’t do this)
- 1/2 cup sliced mushrooms
- 1/4 cup diced onions
- garlic and onion powder to taste
- touch of chipotle powder

Start by browning the ground beef, the add the onions and mushrooms into the pan with the juices. One the onions are truculent, add the coconut milk and let simmer.
Serve this over a delicious baked and shredded spaghetti squash!

Getting to San Luis Obispo! Wildflower!

I was going to call this post “I got a massage from a dude… and I liked it”… but I decided that was’t necessarily what I wanted popping up on Twitter and Facebook.  Right now I am in the airport in Houston (one of my favorite cities) en route to San Luis Obispo for the Wildflower Triathlon.  I’ve been signed up for this race since January and it’s only been in the last couple days that I’ve come to understand what this race entails.  It’s know by multiple connotations:

“The toughest long-course triathlon”

“The Woodstock of Triathlons”

“One giant party (except when you have to race)”

The races consists of vicious hills and hard-packed trail for the run.  On the bike there is “Nasty Grade” which, oh, I can’t wait for!  I’m just praying that my baby has gotten out Cali safely and they’ll put it back together in the right dimensions.

I can’t even begin to express how I feel about this race.  There is massive anxiety and nervousness mixed in with how absolutely stoked I am for this event.  Why I am nervous?  I’m pretty sore right now… I shouldn’t be, but I am.  I got a vicious sports massage on Monday night (yes, from a guy) and he crippled me.  I also know my training isn’t where it was leading into Austin 70.3 last year and not sure how it compares to Kinetic Half Ironman, which was my first 70.3 almost exactly one year ago.  However, I’ve been running those half marathons and gotten a couple long ride.  So I’m just going to stay like I told myself I would–positive and confident!  Goal time? …As fast as possible ha!  I really don’t know based on the hills et al, so we’ll just see.  I’m holding anything back though.

It’s amazing how the support of some people can absolutely amp you and a good friend of mine wished me luck the other night and said I would tear it up and I’m not looking back!  As soon as I get there, as much fun as there will be, all I plan to do, is stretch, eat, and sleep.  Nothing stupid!

Monday night I got a killer sports massage after my workout… it almost killed me and I’ve been sore since haha.  I’m finally feeling a little better though.

Check out some of the new Roctane flavors–these contain extra amino acids which aid in muscle healing and recruitment and also some flavors have caffeine which gives an added boost and can reduce the rate of perceived exertion.  They also sent me some of their new Electrolyte hydration tabs.  These are great to put in my water bottle. They increase hydration abilities of the body by combining them with electrolytes.  Research has also shown that athlete’s can decrease their rate of perceived exertion by simply rinsing their mouth with a sports drink with out drinking a whole bottle.  This can be really helpful when you don’t handle sports drinks well or aren’t working out long enough to need one, but still need to be drinking water to stay hydrated.

Here is what I am planning to use on race day, as well as some course aid like water and a HoneyMilk after!

This week I got another box for my local food delivery company!  Along with fruit and vegetables I got grass-fed ground beef, wild caught Alaskan salmon, chicken drumsticks, and grass-fed buffalo!  I wanted to make sure in the last week pre-race I was getting enough healthy fats, CLA, amino acids, Omega-3s, and antioxidants!

Sunday night I made some burgers and made my cheese spread to put on and stuff in the burger. I started with ground buffalo for the burger mixed with garlic and onions then for the cheese spread I started with 1 laughing cow and mashed it with a 3 cheese blend.

I grilled this inside the burger and then put the rest on top, all served with some sweet potato fries!

Last night I busted out the wild caught salmon.  Bummer is I cooked it on the Foreman grill so it was really pretty dry.  However, I made an awesome avocado sauce from the organic avocado I got in my produce bin and mixed it with salsa and cheese.

I can teach you how to Dougie

Ya know why?

I can break it down. 4 times on the big screen Friday night! A great end to a great week (plus 6 pro sporting events in 8 days). This was the first week in a while that I was able to get a solid 41 miles in running. Now I feel like a bum since I am on the second of 2 days of recover, but whatever right?  It happens.  Don’t essentially need it, but from a mental standpoint I wanted to… plus, later this week I’ll tell you why I’m doing whatever I freaking want today!

My parents were in town this week and I had a great time with them!  It was the first time I had seen them in over 3 months… or anyone that hasn’t been brand new to me. On that note, if you’ve never just thrown yourself into something brand new, do it- it’s worth it.  My dad got in Wednesday and after I picked him up at the airport, we went to a local bar so he could grab a beer and some food.  Here’s what he got:

A salmon hot brown… basically an open-face sandwich with salmon, cheese, a sauce (?) and some fries. The  next morning, I dropped him at the hotel while my mom flew in, smashed it at the gym, then met them for a Reds vs. Astros baseball game. We had great seats on the Third base line and I got toasted in the sun!  It was awesome.

After the game we headed over to the famous Montgomery Inn for some BBQ.  I had BBQ chicken breast with a sweet potato on the side and both parents had the brisket sandwich with a sweet potato as well.  Really Really good, but not quite Dinosaur BBQ level.

Friday night, I met them again after I went to work and we went to dinner.  After that we went to Cyclones playoff hockey game.  This couldn’t have been better since both my dad and I are huge hockey fans and it just so happened the cyclones had a home game for the first round of the playoffs!  The lost. It’s all good though. I went to the game Saturday night which they lost as well so they’re out of the playoffs.  After the game I said goodbye to my parents and they went back since they’re flight was early Saturday morning.

Back to triathlons. I realized a few things this weekend.  Wildflower is going to be what it’s going to be.  I’m not expecting to PR (although I’ll try of course) but it will fun and will be great training. I also learned that I can still ride my bike. Sunday, I met up with a few other triathletes and did a long ride.  We ended up with about 70 miles even though we had to ride slow sometimes and we picked up and then dropped a group of slower riders.  Ended up with about 70 miles though, which I will take being it my 3rd ride of the year.  It was gorgeous on Sunday too!  80 degrees and sunny!  Hello tri top and GPS watch sunburn lines- I missed yall!

I also learned to importance of hydration and nutrition even when you think you are spot on…

To sum the week up, it overall went really well!  Here at the totals (ish)

  • 41 miles running
  • 2 spins
  • 1 long ride of 70 miles
  • 2 swims

This week I’m aiming for around 40 miles again (but focusing on quality over junk miles), 3 swims (6,000m total goal) 1 spin, and 2 outdoor rides with tempo brick runs!

After the 70 miles on Sunday, my legs felt good, but I was hungry lol.  I came home and ate and grabbed a hard nap before waking up and hitting up the treadmill for a goal of a 10k.  I felt awesome- but at about 30 minutes, or 4.5 miles, wham!  I felt like a ton of bricks hit me- I got water and drank a bunch and tried to run again a few times, but it just wasn’t happening!  I felt ok, I was able to jump on the elliptical for 20 more hard minutes but running was just out of the question.  Lesson learned: better fueling ON the bike!  No matter how well you eat after.  I also waited too long to eat after as well… my eating disorder telling me, “don’t eat yet, just wait till you get home.”   …Idiot.

But lessons learned are lessons learned and thats how we get better.

Living in the moment

This past week was one of the toughest I’ve had in a long time.  But it was in both a good and a bad way. As Lizzy told me was one of her goals for this year, I tried to embrace “living in the moment.”  This meant doing a lot of things way outside of my comfort zone.  Monday was my first day in this new rotation for work at the Ohio office and I can tell there is a lot of opportunity here, but it will be a lot of work.  After a long first day, I ended up just taking the day off from working out and trying to relax.  The next day, Tuesday, I was lucky enough to spend my second day of work working from home due to snow!  I felt like such a college kid… I went over the U of Cincinnati campus and spent 3 hours doing work in their library haha!  But I don’t think anyone thought twice about me since I probably look like any other college kid.  After I finished working, I headed over to the gym and got a great workout.

Once I finished the workout, I came home and had a meal that I had been putting off for a long time.  I’d been wanting to make this for a week or so now, but to me, the past workouts hadn’t been good enough to “earn me” that meal.  Disordered, I know.  But Tuesday night was the night, and I made nachos!  This was the first time I had had chips in…forever it seems!  They were awesome.  Chips scare me, but honestly they are pretty clean—I mean the only ingredients in mine were blue corn and oil.

I made a recipe of Blue corn chips, ground turkey breast, and a cheese sauce I made.  The cheese sauce consisted of:

  • 1/3 cup almond milk
  • 1.5oz. light Mexican cheese
  • Salsa

I microwaved this mix until it became a sauce then poured it over the chips and ground turkey.  It looked a little weird, but the flavor was good!  Next time I think I’ll just put the cheese on top of the chips and leave it at that….

The next day though, I knew I couldn’t work out that night because I had to go to a “welcome to Cincinnati” dinner for me with my new bosses.  Therefore, after like 3 hours of sleep, I was up and riding my trainer for hard 45 minutes before work.  The dinner was good and I even ordered a steak at a restaurant!  Hanger steak, what I had, is a like a skirt steak and is pretty lean.

Thursday, though, going to bed too late began to catch up with me and I decided to take the day off…  Not a big deal right?  But on Friday, I felt just as tired and didn’t workout again! 2 and a half days off in a row (since Wednesday wasn’t one of my crazy workouts)!  I was waayyy out of my comfort zone here.

All week, I had been planning to drive to Lexington to see LSU play at the University of Kentucky in basketball.  But instead of getting up early on Saturday to get a workout in before I went, I decided to sleep a little longer.  I told myself, “oh well, I guess I can see them play again someday…” Totally giving in to my eating disorder and letting exercise take the place of fun.  But then one of the people I had met through Twitter here in Cincinnati called me and said he and his girlfriend were planning to go to the game (I had invited them the night before).  So now I had the chance to meet some new people and hopefully make some friends, but instead I wanted to skip so that I could workout…

So I said screw it and went to the game!  It’s a weird dynamic–I was really proud of myself for NOT working out…  However, when I got back that night, I did manage to find enough time to get a solid 90 minute ride in on my trainer… So all worked out for the best!  But that meant I hadn’t run in 4 DAYS! That’s the longest I’ve ever not run!  But who cares, I met some new people and hopefully now have some people to hang out it with here!

The game was a joke–I was one of, I think, 4 LSU fans in the building…

Skipping my workout was a great decision… especially since I still got a great ride in when I got home.  That’s “living in the moment”- embracing opportunities when they come our way. There will be plenty of time to workout in the next 6 months that I am in Cincinnati, but the chance to make new friends, and see LSU play??  Very rare.

Sunday and today however, I’ve had great workout… and guess what?  I ran as as fast as I always have!  I’m also trying to live up to my New Years goals.  I made a new recipe last night of Men’s Health Cook This not That cookbook.  I made oven-fried chicken and sweet potato fries (which I burned lol)

The recipe for me was:

  • 1.5 chicken breast cut in strips
  • 1 cup low-fat buttermilk
  • Hot sauce
  • 1/2 cup wheat bran (use Panko bread crumbs if you have them! I didn’t- they will make the chicken a lot crispier)
  • Ground paprika, chile powder, ranch seasoning, and garlic powder.

Let the chicken soak in a mixture of the buttermilk and hot sauce

Dip the chicken in the bread crumb mixture and bake for 20 minutes at 450*… but don’t bake your sweet potato fries that long or hot!

Makes a lot of strips! Which is great because it seems like there's so much food!

Men's Health Chicken

Speaking of Men’s Health, I just finished reading their Big Book of Food and Nutrition.  It’s really a great book as has a lot of really good information.  This gave even more reinforcement to my 2011 goal of eating better and eating appropriate amounts of healthy fat.  The book talks a lot about how saturated fat is good for you when it comes in natural sources like from animal products like steak, dairy, eggs, and butter.  I’m in.  The bad is all the trans-fats and processed foods.  Pretty obvious.  Eat foods with no added ingredients!

I can’t wait to let myself really begin to enjoy some new foods!  I made a special trip today to Whole Foods to buy some Grass Fed Ground Beef, after it was suggested to me by a Friend.  Can’t wait for some delicious burgers tomorrow!

Changes

More Avocados!

Just a quick snapshot of a quick dinner I whipped up tonight.  Along with a solid baked potato, fruit, steam vegetables, milk…you know how I roll.  Ate all the baked potato too!  Need to be fueled up for this weekend- I’ll be racing the Halfmax National Triathlon Championship on Saturday in Myrtle Beach!  This a half Ironman distance race and could qualify me for Worlds next year if I finish well enough.  So I need fuel in the tank.  I won’t lie, I’m really nervous/anxious about this race, but really excited at the same time.  After the run I threw down last race, I’m really hoping I can do it again this week.  I hope the weather turns out alright as well. 

I mentioned that I “ate the whole baked potato” because, honestly, my eating disorder always tells me that I need to throw parts of each meal.  It’s a much an awful habit as it is a worry about too much food.  But this past week I have begun to make a committment to myself, to God, and frankly to anyone who will listen.  Before I plate up each meal, I take the time so say a quick prayer and swear to God that I’m going to eat all my food because I have deserved it, my body needs it, and he has given the blessing of allowing me to sit down to a hot meal each night, a luxury many people don’t have.  I”ve also been calling my dad each night (or texting Rebekah) and swearing to them that I will eat all my food.  Soon I will be able to just swear to myself, but right now, they all help.  So thank you all. 

That goes back to some other changes in my life I need to make.  I was eating breakfast at work the other day and thought to myself, “how long with I bring in this same meal to work and eat at my desk?”  I know it can’t go on forever and someday I’m sure I’ll eat breakfast at home.  It made me thing about all the things in our lives that we do now, but couldn’t possibly imagine doing any differently.  But someday, we will!  I know back before my Eating Disorder forced me to go in-patient, I used to wear sweat pants and cold gear Under Armor to the gym every day, even in summer, and at the time could not fathom ever working out in anything else.  How crazy is that?  Now I look back and realize absurd that was and how weird I must have looked to other people. 

So of the things in your life that are in our comfort zone- which could you change?  Some you don’t need to, absolutely not, they’re fine!  But I know for me, for example, eating more fat in my diet.  My triathlon Coach/resource, Ben Greenfield who does an awesome podcast each week, answered my question on his show tonight.  I asked about low fat diets and low testosterone, he gave a fantastic answer about how increasing the right fats in my diet will bring my testosterone levels back up!  But, even though I am working on trying, I still have this mental stigma that fat will make me fat!  

So what about other things- do you do the same workout everyday because its “safe” and comfortable?  Do you eat the same meal all the time because, maybe you like it, but because the alternative options fall out of your comfort zone?  I challenge you to try one thing that you benefit from changing and tackle it.  See what happens.  Yeah, it will be hard, but you’ll be tougher for it.  I know I can’t do the same workout every day–I’ll never get any faster.  You’ve got to mix things up and figure out how to be comfortable with being uncomfortable.  Because we can’t predict when life will change on us and this skill will be something crucial to master. 

Ok, moving on to awesome food I made this week!  First- Juicy Loosy’s!  These are burgers stuffed with cheese.  I made some little ones and had them with sweet potato fries instead of buns.  I used 96% lean ground beef as well.  The recipe is simple: mix your meat with whatever seasonings you want (but not so much you detract from the beef) then form the patties, split them in half, fill with cheese, put the top patty back on, and grill!

This next recipe was really out of the box.  I was kind of feeling some mac n’ cheese but wanted to switch it up, so I made “sweet potato n cheese”! 

  • 1 Sweet potato cut into thin slices
  • 1 serving of whatever cheese you want
  • 1/2 cup Almond milk
  • 2 tbsp parmesan cheese
  • Fresh garlic

I started by boiling the sweet potato slices for about 20 minutes

Then prepare the cheese sauce by combing the cheese and almond milk and microwaving till melted together.  This is where I added the spices too.

Then drain the sweet potatoes and mash all together 

Continue stirring and it will all mix together

When it’s ready you’ll know.  Serve piping hot with a little more Parmesan cheese!  It sounds looks odd, but this was seriously so good.  Muscle fuel. 

Seemed like a huge portion compared to the size of the potato I started with... I'm fine with that!

Oh, and as part of my taper, I got a great swim in yesterday- 3200m (2 miles or 128 laps).  Took me long than it should have, but thanks Lizzy for the workout!
