Rants and Raves

I know I haven’t done a written post in a while, but that’s because I’ve been putting together some podcasts that I hope you all can listen to!

First I want to talk about a few things that have been awesome lately… and then a couple rants I have- one being really important.

So- things I’m loving:

  • As I’ve said before, that my computer can read articles to me–but this time, the WAY it reads some words. My favorite is “Paleo”, which it reads “Pahh-lee-oh”.  Also, if anyones types “xoxo” it reads it as “Sockza”  Haha, explain that to me.  And just to let you know, I imagine you all in real life sounding like a computer robot since I have the computer speak your blog posts lol.
  • Brussell Sprouts.  Really! I love vegetables and they are a new way to incorporate more variety.
  • Full fat coconut milk: Check it out- here I mixed it with spaghetti squash and cinnamon… so bomb:

  • The fact that I still got some high-intensity workouts while I was traveling to Nashville last week. Also met up with my man JC there, who owns www.JCDfitness.com.

  • My swims the week before last–I swam over 15,000yds! Hoping to repeat that this week
  • I signed up for 2 races next month- The Gasparilla half marathon on March 4th and the Ocala HITS Half Ironman triathlon on March 25th!  I really need these to test my readiness for Boston so I’m really looking forward to it!  Not thrilled that I have to race against my coach though… but at least he’s not in my age group!
  • FEARLESS NUTRITION RADIO! The podcast I have started with a friend of mine.  We did our bios in the first episode and had an interview with expert Sean Croxton last week.  Pretty cool that we’ve been able to line up some VERY acclaimed and esteemed guests to interview!
  • I ate bacon.. no really!  For the first in my life and all on my own!  Here I made bacon wrapped chicken:

  • I went to Disney last weekend and rode the Rock n’ Roll coaster for the first time… fun picture:

Now a couple rants!

  • First, I don’t know if any of you have listened to the podcasts!  We haven’t had many questions come on or any comments.  These take a lot to work and I really want to bring you guys a lot of benefit!  Please let me know if you have any questions that we can answer and guests you’d like to see.  I’ve got nutritionists, pro athletes, and health gurus lined up and I really want to keep this up!
  • Next- I was watching the show “Fat Chef” on Food Network.  I love Food Network and I appreciate what they are doing but it just highlights again to me how many (I didn’t say all!) “Registered Dietitians” really have no idea what they are doing.  The nutritionist wanted to put a 340 pound woman on an 1,800 calorie diet. Clearly she had no idea about the actual laws of thermogenisis where that woman’s metabolism is actually going to be HIGHER than an average-weight person. Not to mention she’s probably burns twice as many calories as the average person as rest due to the fact of supporting and moving all that weight around and the calories needed to maintain it. The right way to do this is to lower calories below maintenance, but this is still going to be a significant amount of calories which will slowly be tapered down as the woman’s weight decreases proportionately.  Sorry, but that just drives me crazy, same with the Biggest Loser, that these “Celebrity dietitians” don’t know things such as this.  Sorry.

Ok, if you read one, read this one.  My dad sent me an email last week asking if the changes I had made in my life lately were truly benefitting me.  And he was asking completely earnestly.  I took this back to my nutritionist as she has been helping me with a lot of things- prioritizing nutrition, sleep, and all that etc. Basically, she called me out real hard.  I had to be honest with myself and my dad and to her!  Have I done any of the plan that I’ve time, money, and focus on doing?  NO!  Not really.  Yeah, I’ve changed my diet for the better, but what good is that if I am not sleeping enough and not making the lifestyle changes that will allow this better, healthier paleo diet to actually work!

How can I expect to increase my testosterone, beat the iron deficiency that has caused me to become anemic, and to release my fears and comforts with foods if I don’t take the first steps to get me there? So basically, I need to harden the fuck up and step it up.  If I can focus so hard on the other things in my life like working out and eating, why can’t I put the remaining piece of the puzzle into place? I am committing to do (I’m sure you’re laughing and saying “gee Chuck, you’ve only said that a MILLION times!”) but now, the harsh reality that my nutritionist has brought to light has got me focused.

Resolve, Prioritize, Recharge

Come tomorrow we will be 2 weeks into the new year and I have yet to lay out my goals and resolutions.  Well now is the time—they are going down on paper and becoming real.  I told myself that there many things I planned to do, yet I have not been as faithful to them as I had planned.  I think this is largely because I haven’t truly laid them out and identified them for myself.  By writing them out, it gives me something that I tangibly have and can refer back to in order to keep me on track.

Lately, with moving to Cincinnati, I’ve been having a tougher time getting on a set and regular schedule—like I went to work the first day, then was off Tuesday because of snow, then had a dinner meeting Wednesday night… it’s just been busy and unstructured, and I really like structure I guess.  My workouts have been medium—they started very strong (the gym here is great and the pool is a fantastic resource).  I’ve been trying to swim between 1,000-2,000m  in addition after my regular workouts each day.  The problem is, I have just been really unmotivated lately, and it has had some big impacts on my eating, which I am struggling to work through.  So, as part of my goals, I am committing to be more committed to my workouts (in a good way!) and to get on a better schedule that allows me to fuel, train, and recover properly. 

I had a great workout Tuesday, a brief (but hard) spin before work yesterday, but am deciding to take today to let myself recharge and prioritize.  I am committing to go to bed early, to set and align my goals, and to tangibly put them on paper (or blog).  These goals are absolutely true and are also real goals.  Here they are:

Personal

  • Quit backing out on workouts because I am too tired
  • Rekindle my passion and enjoyment of working out again
  • Start to get more sleep—this means going to bed earlier
  • No more waking up on weekends, eating breakfast, then deciding to go back to bed and to go the gym in the afternoon instead
  • Give my body the respect it reserves—to fuel it properly before and after workouts, to give it the number of calories and “goodness” (healthy fat) it needs each day, and to stress less about a missing a workout but having have eaten.
  • To stress less about food—whether or not we exercise, we need fuel and our bodies and MINDS will not function without it
  • To quit throwing food away that are part of my meals

Social/Career

  • To do well at work—to push the bar, be proactive, and deliver over and above what is asked of me
  • To become more socially involved—join some groups, find a triathlon/cycling team, and participate in any events they have
  • Smile more (I try to do this anyway—but I think everyone should try and do this!)

Triathlon/Racing

  • To swim more—this needs a defined amount—at least ______meters per week.  Any thoughts?
  • To WIN a race this year!  Like first in my age group
  • Compete at and place well at the ITU World Championships as part of Team USA in November
  • Finally, be the guy on the front of the Athlete’s HoneyMilk bottle—how cool would that be!

You guys know me by now, let me know anything I am missing–I know some thoughts will come to me later, but any suggestions you have, please let me know!

Speaking of HoneyMilk, check out this great recipe I made last week.  It’s HoneyMilk Marinated Butternut Squash!

  • Cubed Butternut Squash
  • 3 oz. Honey flavor HoneyMilk
  • Cinnamon and pumpkin spice to taste

HoneyMilk and squash

Put the squash, HoneyMilk, and spices in a bowl and let the marinate for up to 6 hours in the fridge.

Marinating

When the time has passed, heat the oven to 400 and place the squash and remaining HoneyMilk on to a baking sheet with foil so that none of the HoneyMilk is lost. 

After removing from the fridge

Spread the squash and remaining HoneyMilk on to the tray

Bake for 20-30 minutes or until the squash reaches your desired doneness!

After baking... Delicious caramelization!

Dinner time!

The squash really soaks up the HoneyMilk and caramelizes beautifully!  It’s delicious–give it a try; I bet Vanilla HoneyMilk would be delicious to.

Well I’ve finally laid my goals out and I want yall to help me stick to them and let me know anything I am missing.  I’m not really “resolving” to do anything– I want to achieve something greater, and that’s why I’m calling them my goals.  Tomorrow is a new day and I begin my 2011 the right way!

Looking Ahead

Hey guys!  I know I haven’t posted in a while.  I was waiting to find out whether or not I qualified for ITU Triathlon Worlds, but at this point I’m not holding my breath.  I also said I was going to do a full race report, but honestly, I really don’t feel like it.  I’m happy with how I finished and what my times were!  Let’s just say that never before had I seen so many millions of dollars in a 100X200 yard transition area, all draped haphazardly over cheap aluminum racks.

I’d also like to give some thanks to those who made this biggest race of my life possible

I’ll let you all know what I found out about worlds.  But LOOKING AHEAD to next week, I leave Friday for my last race of the Triathlon season to Austin Texas for my first Official Ironman sanctioned event.  It’s at these events that people qualify for Ironman Kona or Clearwater 70.3 Ironman Championships!  Speaking of Ironman Kona World Championships, did anyone watch it yesterday and see Chris McCormack win it?  It was awesome- not to mention I met and talked to him at Alcatraz back in May!

I can’t wait to get to Austin.  Not quite sure how I am going to get around at all or who I will have to hang out with, but I’ll figure it out.  Will anyone be in Austin, or know anyone there who could help me out? : )

Training has been good this week.  Here’s what it has looked like since I got my legs back on Wednesday:

  • Wednesday: 9-mile run (60 minutes), 45 min spin workout, 15 minutes elliptical
  • Thurs: 60-min spin class, 6.2 mile run, 10 min elliptical
  • Friday:  Off–3 hours of sleep made my body say, “no way!”
  • Saturday: 7.5 miles, 45min spin, 1.5 mile run, 15 min elliptical
  • Sunday: 7.5 mile (50 mins), 45-min spin, 15 elliptical, 5X2 minute sprint on row machine with weight lifting

The rest of the week will be similar, plus swims Wednesday and Thursday–Race day is Sunday!  This has been pretty intense and I’m pretty tired.  To make sure I have energy though, I’ve been trying to eat well.  Here’s a recipe I made one night…pretty much healthiest meal possible.  It was a scramble featuring Egg Beaters, 96% lean ground beef, and sliced avocado!  How can you beat that mix of lean protein, essential amino acids, and essential fats?!  I served it all over a baked sweet potato.  This sweet savory mix was incredible…really!

Now I have some chicken breast (already cooked) and a little bit of ground beef left that I want to use tomorrow–thinking about mixing it together with a tomato sauce and having over a baked sweet potato again; thoughts??  Maybe some cheddar on there?

Last night I went to my friend Trey’s house for dinner.  He and I went to William and Mary together and now work together as well.  We’d been swapping CrockPot recipes and he invited me over to the my LSU Tigers beat up on the Florida Gators and enjoy some BBQ chicken breast.  I brought broccoli, buns, and potatoes to complete the feast.

Mad props Trey, the chicken was great!  I served mine of a baked potato and had it with fresh steamed broccoli.  I need this after that workout!

As I was running the other day, I realized I hadn’t truly “sprinted” in a while.  I mean, I had run “all out” but when was the last time I truly pushed my body as hard as I could and really tried to discover what I can do?  I bet if I asked that to most people, they wouldn’t know either.  30 minutes on an Elliptical machine, reading a magazine, probably isn’t pushing you to limits not met before.  So I have been incorporating sprints mid-workout (biking and running) more and more.  Not only are they fantastic for your fitness level and overall health, but it feels incredibly rewarding to find out what you can do.
